My Weekly Pancake Ritual
Every week, I whip up a double batch of these pancakes and freeze them. My children love having a warm, homemade breakfast every morning, and I love knowing exactly what’s in their food. Just pop a few in the toaster (for waffles) or microwave, and breakfast is ready in minutes!

The Recipe
Ingredients:
1 cup sourdough discard (unfed)
2 cups flour (Use bread flour for extra fluffiest! All-purpose or whole wheat are also ok)
1 1/2 cup milk (dairy or non-dairy)
1 egg
1 tsp vanilla
2 tsp baking powder
1 tsp baking soda
1 tsp salt
Instructions:
In a large bowl, whisk together the sourdough discard, milk, egg, and vanilla.
Add the flour, baking powder, baking soda, and salt. Stir until just combined—don’t overmix!
Heat a nonstick skillet or griddle over medium heat. Lightly grease with grass fed butter.
Ladle a small amount of batter for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. (Usually 2 minutes on each side)
Serve warm, or let cool before transferring to a freezer bag.
Tips for Success
Bring your starter to room temperature, if you forgot to that's also ok but I prefer to.
Add blueberries, chocolate chips, lemon zest or your favorite mix-ins for variety.
To reheat, microwave straight from the freezer for pancakes toaster for waffles!
